Mother's Day


What an awesome first Mother's day I had. Nate got me a card, saying that he would perform any "service" that I desired, pending physical limitations. Ha! I told him that I wanted him to go shopping with me (with no complaining). Poor guy. I think he was hoping that I would ask him to cook a meal or something.


Oh, wait, he did cook lunch for me anyhow! We went to church in the AM, then came home and relaxed. Nate made chicken tetrazini, which was absolutely delicious. I really ought to get that recipe up here on the webpage. It's a keeper. Then we chatted with my Dad and Mom before going on what is becoming a ritual Sunday afternoon hike up in the woods. It was a lovely day. Sunny, relatively warmish/coolish, no smog. Totally lovely being up in the woods with my two favorite people.


After the walk we basically just relaxed here, chatted on Skype with family, and enjoyed some Berner Wurst. Our German relatives introduced us to these lovely sausages. Basically, they're just little sausages with bacon wrapped around them. Bacon, did you say?!! Yes, bacon! If you're ever looking for an interesting way to spice up your grill-life, wrap some bacon around your favorite sausage. I guarantee it will make your day at the minimum.

Maybe, since I'm feeling so generous (and Elena is actually taking a good nap, oh and I'm thinking about bacon) I will give you the Chicken Tetrazini recipe. Here goes:

Ingredients
1 chicken, boiled
1/2 pound bacon
8 oz. mushrooms
1/2 green pepper
1 onion
1 pint whipping cream
chicken broth
1 TBS flour
1/2 tsp garlic powder or 1 tsp fresh garlic
salt
pepper
noodles (we use spaghetti)

Recipe
1. Boil the chicken until done (45 min-1 hour). Debone, tear chicken into pieces and set aside. Save broth. OR, if you're lazy like I am, buy a rotisserie chicken from the grocery store and tear off the pieces.
2. Fry bacon and set aside.
3. Fry the onion, mushrooms, and green pepper in a little of the bacon grease. Add garlic.
4. Add the flour to the onion mixture and then 1 cup of chicken broth. Stir until smooth and bubbly, then add whipping cream (looks like approximately 1/2 broth, 1/2 cream).
5. Add chopped, salted chicken and bacon. Then salt and pepper to taste and pour over your noodle of choice.
