Just had to share...

Last night I had an epiphany...

Okay, not an epiphany, but I did discover something really cool.

I've always hated sweet potatoes. Where I grew up, people make them into casseroles so sickeningly sweet that my mouth twitches wildly just thinking about it. I read a Smitten Kitchen recipe yesterday that had sweet potatoes in it, which got me thinking about dinner. I had a few old potatoes in the cupboard, and I figured that after cutting out the rotten parts, there just wouldn't be enough potato for a complete side dish. "Potatoes" were added to the grocery list.

While strolling around the supermarket, I noticed the sweet potatoes laying off to the side. On a whim, I picked them up and threw them into the cart.

Back at the ranch I was preparing the potatoes like I usually do. Sliced really thin, covered with olive oil, salt, pepper, and cajun seasoning, when I decided to try something different. I made about half the potatoes "old school" style and then prepared the other half by covering them with olive oil, salt, pepper, garlic powder, onion flakes, and grated fresh Parmesan cheese on top. I did this for both the normal and sweet potatoes.

The savory cheese, garlic, etc. meshed perfectly with the sweetness of the sweet potato. In fact, it took the overly sweet bite out of it. Elena and I both ate huge portions, and made Nate eat all the normal potatoes (which were also quite good).

So, if you don't like sweet potato casserole like me, give this a shot. Sweet potatoes are healthier than normal potatoes, and face it, they're sweet! Your kids should like them.

Oh yeah, I baked them at 425 Fahrenheit for maybe 20 some minutes. I actually lost track of time. And when they were done I grated more cheese on top. Yum, Yum, Yum!

Back to my Agatha Christie novel. Elena's napping and it's time for Mommy to get a break!

Glad you liked the sweet potatoes. I love baked sweet potatoes with butter, brown sugar, and pecans. Fantastic.

Agatha Christie? You failed to mention that little tidbit when we talked on Saturday! What book are you reading? And, despite my penchant for overly-sweet things, that dish does sound delish. :)
