French Toast

Yesterday I made French Toast for breakfast. We had leftover crusty bread from chicken salad sandwiches, so I french toasted it up and enjoyed it thoroughly. Last night when I went to bed I was dreaming of eating the rest of the french toast, as I hadn't used up all of the mixture. I couldn't wait to eat one more piece of that delicious concoction.

Fast forward to this morning. I stumbled out of bed and rushed straight to the kitchen, heated up my skillet, put the butter on it, and opened up the cupboard to grab out a couple pieces of bread.... except that, we had no bread!!! I searched madly, everywhere I could possibly think of. And then it hit me. My HUSBAND!!!!!!!! I called him up and asked him if he had any idea where our loaf of bread was. He was silent. Then I knew. That little bread thief had deprived me of my perfect, dreamed of breakfast (all because he wanted a PB&J for breakfast!!!!).

I slammed down the phone and stewed. How could he?!!!!!

And then, after eating an egg and a few cornflakes (all we had left for cereal), I realized that I had been a jerk. So, I made him these pumpkin muffins.



Just like the author, all I had was a canned pumpkin pie mix (I didn't have the packed pumpkin), but unlike her I added all of the spices anyways. I also reduced the sugar down to 3/4 of a cup (from 1.25 cups). And the muffins are delish! Nice and pumpkinny, spicy, and (cough) chocolaty, as I added chocolate chips in over half of them. Being the sweet wife that I am, I left some unblemished for Nate.

So, I hope I have served my penance. Perhaps I'll also make him a nice dinner.

In completely unrelated news, my nervousness is over. Last Friday I finally read my story and did the related craft project for the Children's English Library. Anyone who knows me, knows that I get quite scared getting up in front of people in general... even children, but possibly even more so children with their critical parents. So I was really, really nervous come Friday morning. But I planned and practiced my little speech, read through my book several times, and spent approximately eight hours cutting contact paper, construction paper, tissue paper, and wanting to cut myself getting the craft ready.

You can see in the picture below the Diwali candle that was the craft project (I made the one in the picture).


Surprisingly enough, I had a lot of fun reading the story and doing the craft. I was still nervous, but thanks to Frances (head librarian) and kind parents, I think I entertained approximately ten three year olds for about 3/4 of an hour. Not bad.
